Next time you feel like a delicious snack why not try these dips, so easy and so good for you!
Zucchini Almond Dip
- 1 cup almonds, soaked overnight
- 2 zucchinis, chopped
- 2 small cloves of garlic
- pinch sea salt
- freshly group black pepper
Place all ingredients into a blender/food processor and puree until the mixture is smooth but still has some texture to it. A little crunch is good!
Beet-Sun Dip
- 2 large beetroots
- 1/2 lemon juices
- 3-4 tablespoons sunflower seeds, soaked over night
- 1 teaspoon mustard powder
- pinch of salt
- freshly ground black pepper
Cook the beetroot with skin on until tender. peel and chop into cubes. Place all ingredients into a blender or food processor and puree until smooth.
Sweet Potato Hummus
- 350h Sweet potato chopped
- 200g chickpeas
- 2 small cloves of garlic
- 1/2 cup tahini
- 1 teaspoon, group cumin
- 1 lemon, juiced
- (water)
- 2 tbl extra virgin olive oil
- pinch of salt
- freshly ground black pepper
If you want to make your own Tahini:
- 4 tbl seasame seeds, toated until golden brown
- 1 tbl cold pressed seasame oil
- pinch salt
- 2-3 tablespoons warm water
Place seeds into a food processor or coffee grinder and blitz until smooth, add sesame oil and warm water (tablespoon at a time to reach perfect consistency) and blizt again until smooth.
Add in all other ingredients and blend until smooth, add water as required.
Prepare your choice of vegetables (carrots, cucumber and green beans are all good choices) and gobble up immediately!
